2021 Cabernet Sauvignon
Fruit Sourcing:
Our Cabernet was harvested during the later end of the season, taken from high altitude, cool climate vineyards in the Hilltops Region of NSW. We aim to present rich, warm, ripe flavours of berry fruits and complex oak.
The Wine:
The nose carries blackcurrant and plum stone-fruits topped by spicey cloves and
cinnamon. The vanilla highlights derived from a mix of old and new American Oak
fuses the fruit and spice flavours to allow complexity without losing sweet fruit aromas
of the cool climate cabernet. Extended cold soaking of skins prior to a moderately warm fermentation has allowed rich colour and sweet fruit flavour to be locked into the wine’s profile.The palate carries depth of fruit and length. The front of palate shows spice and pepper
but is dominated super-ripe plums and black current. Length of stone-fruit and velvety,
warm tannins allows the wine to finish with a melt of chocolate and dried black berry.
Pairings:
The wine is well matched with rich red meat dishes such as lamb shanks or beef
casserole, or rich bolognaise.
Aging:
Our Cabernet is drinking well now and would also benefit from at least 5 - 7 years of
bottle aging.

Local delivery to the Hunter Valley and surrounds will be a minimum of 1-3 working days. Delivery outside of the Hunter to most capital cities will be up to 7 working days. Delivery to regional centres and Western Australia may take up to 21 working days.
