2021 Sauvignon Blanc
Fruit Sourcing:
We have harvested this Sauvignon Blanc early during the season from high altitude, cool climate vineyards in the Hilltops Region of NSW to retain crisp, clean, green, fresh flavours and to give the wine a vibrant green hue and a fresh youthful appearance.
The Wine:
The backbone of flavour is dominated on the nose by crisp green apple while, gooseberry, lemon and cut grass take up the high notes and show sweet fruit ripeness indicating a hint of skin contact during crushing.
The palate is lean but carries depth of fruit and length. The front of palate gives the impression of honeydew melon characters but finishes with the crispy cleanliness of lemongrass, complexed by a honeysuckle finish.
Pairings:
The wine is well matched with fresh seafood dishes such as fresh prawn and oyster but can be just as easily paired with a light seafood risotto or spicey, green curry.
Aging:
This Sauvignon Blanc is best enjoyed in its first 5 years of aging but may benefit from further time in bottle.

Local delivery to the Hunter Valley and surrounds will be a minimum of 1-3 working days. Delivery outside of the Hunter to most capital cities will be up to 7 working days. Delivery to regional centres and Western Australia may take up to 21 working days.
